Process: Called ‘natural peeling’. Shortly after harvesting, the cherries are peeled and separated from the pulp. They are then dried with the gentle breeze of the highlands under the Brazilian sun.

Process: Coffee cherries are peeled and left to sit in sugar mucilage for 24-36 hours. During rest, sugar is dissolved during a fermentation process. Kind of like a normal sourdough fermentation. After that, the fruits are washed in fresh water before being slowly dried.
